Thirty-eight seats, one room, a menu that changes when the fish does. Open to non-residents for dinner Wednesday to Sunday.
Sal is the ground-floor dining room, opening onto the courtyard through the arches that were bricked up for most of the building's life and reopened in 2021. It seats thirty-eight, takes dinner bookings Wednesday to Sunday, and serves breakfast to house guests every day from 7am.
The kitchen buys whole fish at Sydney Fish Market three mornings a week and vegetables at Carriageworks on Saturdays. Bread comes from a bakery four streets away. The menu is short, written on the day, and leans Spanish because the building does.
Bookings for non-residents open thirty days ahead. House guests do not need to book but should tell us at check-in if they want a table on a Saturday, because there are thirty-eight seats and Saturday is Saturday.
The courtyard bar opens at four and stays open later than the kitchen. It is the one part of the building anyone can walk into without a reservation.
